12 bamboo skewers2 pounds skinless, boneless chicken thighs½ cup soy sauce½ cup sake⅓ cup mirin (Japanese sweet wine)2 teaspoons finely grated ginger2 tablespoons minced green onions¼ cup brown sugar1 tablespoon vegetable oil¾ cup mayonnaise¼ cup sour cream⅓ cup buttermilk1 tablespoon white miso paste, or to taste1 tablespoon minced green onion1 clove garlic, crushed1 tablespoon finely chopped fresh tarragon1 tablespoon finely chopped fresh dill1 tablespoon finely chopped fresh chivesfreshly ground black pepper to taste1 pinch cayenne pepperDirections

Season with black pepper and cayenne. Whisk dressing until thoroughly combined.Thread chicken pieces onto skewers.
